• Boil the kettle. Meanwhile, finely chop carrot and brown onion. Drain sweetcorn. • Half-fill a medium saucepan with boiling water. • Add basmati rice and a pinch of salt and cook, uncovered, over high heat until tender, 10 minutes. • Drain rice, rinse with warm water and set aside. TIP: The rice will finish cooking in step 4!

• In a medium bowl, combine diced chicken, seasoning blend (see ingredients) and a drizzle of olive oil. Set aside.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook carrot, onion, corn and diced bacon, breaking up with a spoon, until golden, 4-5 minutes. • Push bacon and veggies to the side, crack the egg into the pan and scramble until cooked through, 1 minute.

• Add sweet soy seasoning and garlic paste and cook, until fragrant, 1 minute. • Add the cooked rice and the soy sauce and cook, stirring, until well combined, 2-3 minutes. Transfer rice directly to serving bowls and cover to keep warm.

• Wipe out frying pan and return to medium-high heat with enough olive oil to cover the base. Meanwhile, to the bowl with the chicken, add cornflour and the plain flour and toss to combine. • When oil is hot, dust off any excess flour from chicken, then cook, tossing occasionally, until browned and cooked through, 5-6 minutes. • Transfer to a paper towel-lined plate.

• Divide bacon fried rice between bowls. Top with chicken. • Drizzle sweet chilli sauce over chicken. Tear over coriander. Enjoy!
