Cooking Steps

Preheat the oven to 200°C/180°C fan-forced. Slice the yellow peaches into 2cm wedges. Juice the orange. In a large baking dish, add the peach slices, maple-flavoured syrup and orange juice. Stir to combine, then bake until the peaches are tender, 25-30 minutes. Allow to cool for 10 minutes.

While the peaches are baking, roughly chop the strawberries and pistachios. Halve the brioche slices.

Heat a medium frying pan over a medium-high heat. Toast the pistachios until golden, 2-3 minutes. Remove from the heat and set aside.

Place the longlife cream and vanilla-flavoured essence in a large bowl or jug and whisk with electric beaters until soft peaks form and almost doubled in size, 4-6 minutes. TIP: For the perfect soft peaks, whip until the cream just clings to the whisk or beater when lifted! TIP: If you don't have an electric mixer, use a hand metal whisk!

Arrange 3/4 of the brioche slices in a glass serving bowl. Top with the baked peaches and juice from the baking dish. Pour over 1/2 the vanilla custard, then layer with the remaining brioche slices. Evenly place the strawberries on top and cover with the remaining custard. Top with the whipped cream, spreading evenly with the back of a spoon. Cover and refrigerate for 4-6 hours or overnight.

Garnish the trifle with the cherries and toasted pistachios before serving. Enjoy!
