  • Roughly chop cos lettuce.
Cook the beef

  • Discard any liquid from beef strip packaging. In a large frying pan, heat a drizzle of olive oil over high heat.
  • When oil is hot, cook beef strips and Tex-Mex spice blend in batches, tossing, until browned and cooked through, 1-2 minutes. Transfer to a plate.

TIP: Cooking the meat in batches over a high heat helps it stay tender.

Heat the pita bread

  • Meanwhile, microwave pita bread on a plate for 20 seconds, until warmed through.
  • In a large bowl, combine cos with a drizzle of olive oil and white wine vinegar. Season to taste.

  • Halve pita bread and fill with some sour cream, cos and Tex-Mex beef. Serve with corn chips and any remaining cos. Enjoy!
