It’s time to chow down on this delicious chowder (pun intended). There’s pops of bacon and corn, veggies galore and Cheddar croutons to soak it all up. You can’t go wrong with this one, it’s a hug in a bowl.

• Preheat oven to 220ºC/200ºC fan-forced. • Finely chop onion and garlic. Drain the sweetcorn. Cut potato and carrot into bite-sized chunks. • Place potato and carrot on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Spread out evenly, then roast until tender, 20-25 minutes.
TIP: If your oven tray is crowded, divide the veggies between two trays.
• Meanwhile, heat a large saucepan over medium-high heat with a drizzle of olive oil. • Cook diced bacon, sweetcorn and onion, breaking up bacon with a spoon, until golden, 6-7 minutes.
• Add garlic, Aussie spice blend and garlic & herb seasoning and cook until fragrant, 1-2 minutes. • Add cream (see ingredients) and the water and bring to the boil, then reduce heat to medium and cook until slightly thickened, 5-6 minutes.
• Meanwhile, cut or tear wholemeal panini into bite-sized chunks. • Place panini chunks on a second lined oven tray. Drizzle with olive oil season with salt and pepper and toss to coat. Sprinkle with shredded Cheddar cheese. • Bake until golden, 5-7 minutes.
• When the chowder is done, remove from heat, then stir through roasted veggies and baby spinach leaves.
• Divide bacon and corn chowder between bowls. • Top with cheesy croutons to serve. Enjoy!
