You're going to fall head over heels for our new pulled pork. With the long slow cooking already done, it's ready to roll in any recipe. Try adding the juicy, tender meat to a saucy filling, rolling it up in tortillas and baking it with a cheesy crust. It's enchilada heaven!

Roughly chop the baby spinach leaves. Grate the carrot. Finely chop the tomato. Finely chop the garlic and brown onion.

Heat a large frying pan over a medium-high heat with a drizzle of olive oil. Cook the onion and carrot until softened, 4-6 minutes. Add the garlic and Louisiana spice blend and cook until fragrant, 1 minute.

Add the pulled pork and cook, breaking it up with a spoon, 1-2 minutes. Remove from the heat, then stir through the enchilada sauce and butter.

Preheat the grill to a medium-high heat. Grease a baking dish with olive oil. Lay a mini flour tortilla on a flat surface and spoon 1/4 cup of the pork mixture down the centre. Roll the tortilla up tightly and place, seam-side down, in the baking dish. Repeat with the remaining tortillas and pork mixture, ensuring they fit together snugly in the baking dish. Sprinkle with the shredded Cheddar cheese, then grill the enchiladas until the cheese is melted and the tortillas are warmed through, 5-10 minutes.

In a medium bowl, combine the baby spinach, tomato and a drizzle of white wine vinegar and olive oil. Season to taste.

Divide the cheesy pulled pork enchiladas between plates. Top with the tomato salad.
