• Boil the kettle. • Half-fill a medium saucepan with boiling water over high heat with a generous pinch of salt. • Cook penne in boiling water until ‘al dente’, 9 minutes. • Reserve pasta water (1/3 cup for 2 people / 2/3 cup for 4 people). Drain penne, then return to saucepan. TIP: ‘Al dente’ pasta is cooked through but still slightly firm in the centre.

• Meanwhile, finely chop garlic. • Thinly slice tomato into rounds. Little cooks: Under adult supervision, older kids can help peel the garlic!

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook diced bacon, breaking up with a spoon, until golden, 4-6 minutes. • Add garlic and cook until fragrant, 1 minute.

• Stir in cream (see ingredients), chicken-style stock powder and the reserved pasta water and cook until slightly thickened, 1 minute. • Remove from heat, then stir in cooked penne and baby leaves, until combined. Season with pepper.

• Preheat grill to high. • Transfer pasta to a baking dish, then top evenly with tomato rounds. Sprinkle over shredded Cheddar cheese. • Grill until cheese is melted and golden, 8-10 minutes. TIP: Grills cook fast, so keep an eye on the pasta! Little cooks: Add the finishing touch by sprinkling the cheese on top.
