Large Frying Pan

Cooking Steps

1
  • Preheat oven to 240°C/220°C fan-forced.
  • Halve chat potatoes. Cut parsnip in quarters lengthways.
  • Place potatoes and parsnip on a lined oven tray. Drizzle with olive oil, season with salt and pepper and toss to coat.
  • Roast until tender, 25-30 minutes.
2
  • When potatoes have 10 minutes remaining, trim baby broccoli and place on a second lined oven tray.
  • Drizzle with olive oil and season with salt and pepper.
  • Roast until tender and slightly charred.
3
  • While baby broccoli is roasting, cut lemon into thin slices.
  • Thinly slice garlic.
4
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Pat salmon dry with paper towel and sprinkle over paprika spice blend.
  • When oil is hot, cook salmon, skin-side down first, until just cooked through, 2-4 minutes each side. Transfer to a plate.

TIP: Patting the skin dry helps it crisp up in the pan!

5
  • Wipe out pan and return to medium-high heat with a drizzle of olive oil.
  • Cook garlic until fragrant,1 minute.
  • Stir in cream, Dijon mustard and lemon slices and simmer, 1-2 minutes. Season with salt and pepper.
6
  • Divide roasted baby potatoes, parsnip, baby broccoli and salmon between plates.
  • Spoon over creamy mustard sauce. Tear over parsley to serve. Enjoy!
