Very thinly slice the baby fennel. Peel the orange and remove the white pith. Thinly slice into half-moons. Roughly chop the roasted hazelnuts.
Heat a medium frying pan over a medium-high heat. Add the hazelnuts and toast until golden, 3-4 minutes.
In a large bowl, combine the spinach and rocket mix, baby fennel, orange, a generous drizzle of olive oil and a pinch of salt and pepper. Toss to combine.
Divide the fennel & orange salad between plates. Drizzle over the balsamic glaze. Crumble over the feta and top with the hazelnuts. Enjoy!
