• See ‘Top Steak Tips!’ (below left).
• Chop broccoli (including stalk!) into small florets.
• Slice courgette into half-moons.
• Finely chop garlic.
• Thinly slice fresh chilli (if using).
• Place beef rump between two sheets of baking paper. Pound beef with a meat mallet or rolling pin until slightly flattened. Season beef with salt and pepper. • In a large frying pan, heat a drizzle of olive oil over high heat. When oil is hot, cook beef, turning, for 4-5 minutes (depending on thickness), or until cooked to your liking. • Transfer to a plate to rest. • Return the frying pan to medium-high heat with a drizzle of olive oil • Cook prawns, tossing, until pink and starting to curl up, 3-4 minutes. Transfer to a bowl. TIP: Pounding the beef ensures that it's extra tender once cooked.
• Wipe out the frying pan, then return to medium-high heat with a drizzle of olive oil.
• Cook broccoli and courgette, tossing, until tender, 5-6 minutes.
• Add garlic and cook until slightly wilted and fragrant, 1-2 minutes. Season to taste.
• In a small heatproof bowl, microwave honey-soy sauce and the vinegar, in 30 second bursts, until warmed through. Stir through any steak resting juices. • Slice steak. • Divide beef steak, prawns and green veggies between plates. • Spoon over honey-soy sauce and tear over coriander. • Sprinkle chilli (if using) to garnish. Enjoy!
