Goat Cheese
Preheat oven to 220°C/200°C fan-forced. Roughly chop tomato. Thinly slice mozzarella. Lay pizza bases on a flat surface, rough side down. Spread evenly with pizza sauce using the back of a spoon. Top with tomato and mozzarella.
Place pizzas directly on a wire rack in oven and bake until base is golden, 10-12 minutes (use two wire racks if your pizzas don't fit). TIP: Placing pizzas directly onto wire racks helps the base to crisp up.
Top with basil pesto and crumble over goat cheese. Tear over parsley. Enjoy!
