Onion & Garlic Paste
• Heat olive oil in a frying pan over high heat • Trim green beans and halve • Cook chicken, green beans until browned and cooked through, 5-6 mins
• Add onion paste, curry paste (1/2 packet for 2P / 1 packet for 4P), sweet soy seasoning and cook until fragrant, 1-2 mins • Add coconut milk, salad leaves, a splash of water and simmer until slightly thickened, 1 min
• Microwave rice and flat breads until steaming, 2-3 mins • Plate up rice and curry. Top with nuts and torn coriander • Serve with flatbreads. Enjoy!
