
Tonight’s dining adventure brings the fun, with DIY beef meatballs, cheesy potato wedges and a colourful assortment of veggie sticks - we’re talking green beans, carrot and broccoli - which pair perfectly with one of our favourite condiments; tangy BBQ sauce!

• Preheat oven to 240°C/220°C fan-forced.
• Cut potato into wedges.
• Place on lined oven tray. Drizzle with olive oil,
season with salt and toss to coat.
• Bake until tender, 20-25 minutes.
• In the last 5 minutes of cook time, remove from
oven, sprinkle with shredded Cheddar cheese
and bake until golden and crisp.
Little cooks: Add the finishing touch by sprinkling
the cheese on top.
TIP: If your oven tray is crowded, divide between
two trays.

• Meanwhile, chop broccoli (including stalk!) into
small florets.
• Trim green beans.
• Thinly slice carrot into sticks.

• Meanwhile, in a medium bowl, combine beef
mince, fine breadcrumbs, savoury seasoning
and the egg.
• Using damp hands, roll heaped spoonfuls of
beef mixture into small meatballs (5-6 per
person). Transfer to a plate.
Little cooks: Join the fun by helping combine the
ingredients and shaping the mixture into meatballs!

• In a large frying pan, heat a drizzle of olive oil
over medium-high heat.
• Add meatballs, turning, until browned and
cooked through, 8-10 minutes (cook in batches
if your pan is getting crowded).

• While the meatballs are cooking, add broccoli,
green beans, carrots and a splash of water to
a large microwave-safe bowl, then cover with a
damp paper towel.
• Microwave veggies on high until just tender,
2-4 minutes.
• Drain veggies, then return to the bowl and
season to taste.

• Divide cheesy wedges, mini beef meatballs and
steamed veggies between plates.
• Serve with BBQ sauce. Enjoy!
