Garlic
Chop the broccolini in half. Thinly slice the carrot (unpeeled) into half-moons. Finely chop the garlic. In a small bowl combine the teriyaki sauce, brown sugar, soy sauce, rice wine vinegar, water, a pinch of pepper and 1/2 the garlic.
Heat a large frying pan over a medium-high heat. Add the sesame seeds and toast, tossing, until golden, 3-4 minutes.
Return the frying pan to a high heat with a drizzle of olive oil. Add the courgette noodles and cook, until starting to soften, 1-2 minutes. Add a pinch of salt and the remaining garlic and cook, until fragrant, 1 minute. Transfer to a large bowl.
Return the frying pan to a high heat with a drizzle of olive oil. When the oil is hot, add the broccolini, carrot and a splash of water and cook until tender and slightly charred, 6-8 minutes. Transfer to the bowl with the cooked courgette noodles.
Return the frying pan to a medium-high heat with a drizzle of olive oil. Add the beef mince and cook, breaking up with a spoon, until just browned, 4-5 minutes. Add the teriyaki mixture and stir to combine. Cook until slightly reduced, 30 seconds. Return the cooked veggies and courgette noodles to the pan and stir until heated through, 1 minute. Season to taste.
Divide teriyaki beef and veggies with courgette noodles between bowls. Pour over any remaining sauce from the pan. Garnish with the toasted sesame seeds.
