Cooking Steps

  • Boil the kettle. Half-fill a medium saucepan with boiling water.
  • Add jasmine rice and a pinch of salt and cook, uncovered, over high heat until tender, 12-14 minutes.
  • Drain, rinse with warm water and set aside.

  • Meanwhile, drain sweetcorn.
  • Finely chop carrot and garlic.
  • Thinly slice spring onion.

  • Heat a large frying pan with a drizzle of olive oil over medium-high heat.
  • When oil is hot, cook pork & chive dumplings, 2-3 minutes on each side, until pastry is golden and cooked through.
  • Transfer to a plate and cover to keep warm.

TIP: Ensure filling is piping hot before serving.

  • Wipe out frying pan and return to medium-high heat with a drizzle of olive oil.
  • Cook carrot and corn until tender and browned, 4-5 minutes.
  • Add plant-based kimchi and garlic cook until fragrant, 1 minute.
  • Add cooked rice, gochujang, the soy sauce and brown sugar and cook, tossing until combined, 2-3 minutes. Season to taste.

  • Reduce heat to medium and sprinkle over shredded Cheddar cheese.
  • Cover with a lid so cheese melts, 1-2 minutes.

  • Divide cheesy kimchi fried rice between bowls.
  • Top with pork dumplings and garnish with spring onion. Enjoy!
