Cooking Steps

Roast the veggies

• Preheat oven to 220°C/200°C fan-forced.
• Chop broccoli (including stalk!) into small 
florets. Cut carrot and potato into bite-sized 
chunks. Cut onion into thin wedges.
• Place prepped veggies and peeled pumpkin 
pieces on a lined oven tray. Drizzle with olive oil, 
season with salt and pepper and toss to coat. 
• Spread out evenly, then bake until tender,  
20-25 minutes. 


TIP: If your oven tray is crowded, divide the veggies 
between two trays.

Meanwhile, finely chop the garlic. Cut brown onion into thin wedges. Place your hand flat on top of chicken breast and slice through horizontally to make two thin steaks. Zest the lemon to get a generous pinch and slice into wedges. In a jug, combine the ginger, garlic, lemon zest, lemon juice, soy sauce mix and brown sugar.

• In a small bowl, combine ginger paste, garlic, 
lemon zest, a good squeeze of lemon juice, soy 
sauce mix and the brown sugar

Cook the chicken

Return the frying pan to a medium-high heat with a drizzle of olive oil. Cook chicken steaks until cooked through, 5-6 minutes each side (cook in batches if your pan is getting crowded). TIP: The chicken is cooked when it is no longer pink inside.

Remove the frying pan from the heat and add the soy-ginger mix to the frying pan, carefully turning the chicken in the sauce until well coated. To the oven tray with the roast veggies, add the onion, baby spinach leaves and garlic aioli (see ingredients). Toss to combine and season to taste. TIP: the residual heat in the pan will cook the sauce!

Finish & serve

Divide the soy and ginger chicken and roast veggie salad between plates. Spoon any remaining pan juices over the chicken. Serve with any remaining lemon wedges. Enjoy!
