• Bring a medium saucepan of salted water to the boil. • Peel potato and cut into large chunks. Thinly slice carrot into rounds. Cut broccoli into small florets, then roughly chop stalk. Place chicken breast between two sheets of baking paper. Pound chicken with a meat mallet or rolling pin until they are an even thickness, about 1cm-thick. • In a shallow bowl, whisk the egg, plain flour and Aussie spice blend. In a second shallow bowl, place panko breadcrumbs and grated Parmesan cheese.
• Cook potato in boiling water for 5 minutes. Place a colander (or steamer basket) on top of the saucepan, then add carrot and broccoli. • Cover with a lid and steam until veggies are tender and potato is easily pierced with a fork, 5-7 minutes. • Transfer steamed veggies to a bowl. Drizzle with olive oil and season. Cover to keep warm. • Drain potato and return to pan. Add the butter and the milk and season generously with salt. Mash until smooth. Cover to keep warm.

• While veggies are cooking, boil the kettle. • Dip chicken into the flour mixture, followed by the cheesy breadcrumbs. • Heat a large frying pan over medium-high heat with enough olive oil to coat the base. • Fry crumbed chicken in batches until golden and cooked through, 3-6 minutes each side. Transfer to a paper towel-lined plate.
• Meanwhile, in a medium heatproof bowl, combine gravy granules and the boiling water (1/2 cup for 2 people / 1 cup for 4 people) and whisk until smooth, 1 minute. • Slice chicken schnitzel. • Divide cheesy chicken schnitzel, veggies and mash potato between plates. • Spoon gravy over chicken to serve.
