There’s a surprise in this dinner that we are eager to share with you. Bite into the Middle Eastern-spiced beef meatballs and you’ll find glowing currants rolled into the mix. We saw them and couldn’t resist, so dig in and enjoy with a roast veggie couscous salad.

Cooking Steps

Roast the veggies

• Preheat oven to 240°C/220°C fan-forced. Boil the kettle. • Cut carrot and courgette into bite-sized chunks. • Place veggies on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Roast until tender, 20-25 minutes.

Make the couscous

• Meanwhile, place couscous and beef-style stock powder in a medium heatproof bowl. • Add the boiling water (3/4 cup for 2 people / 1 1/2 cups for 4 people) and stir to combine. • Immediately cover with a plate and leave for 5 minutes. Fluff up with a fork and set aside. • When the veggies are done, combine the couscous, roasted veggies, baby spinach leaves and a drizzle of white wine vinegar and olive oil in a large bowl. Season.

Make the meatballs

• Meanwhile, in a medium bowl, combine beef mince, Middle Eastern seasoning, fine breadcrumbs, currants and the egg. • Using damp hands, roll heaped spoonfuls of beef mixture into small meatballs (4-5 per person). Transfer to a plate. • Meanwhile, in a large frying pan, heat a generous drizzle of olive oil over medium-high heat. Cook meatballs, turning, until browned and cooked through, 8-10 minutes (cook in batches if your pan is getting crowded).

Serve up

• Divide roast veggie couscous and Middle Eastern beef and currant meatballs between bowls. • Dollop with Greek-style yoghurt and sprinkle over roasted almonds. Enjoy!
