Cooking Steps

1
  • Add the water (for the rice) to a medium saucepan and bring to the boil.
  • Add jasmine rice, stir, cover with a lid and reduce heat to low.
  • Cook for 12 minutes, then remove the pan from heat and keep covered until rice is tender and all the water is absorbed, 10-15 minutes.

TIP: The rice will finish cooking in its own steam so don't peek

2
  • Meanwhile, finely chop onion.
  • Trim green beans.
  • Using a vegetable peeler, peel carrot into ribbons.
  • Trim baby cos lettuce and separate leaves.
  • Drain sweetcorn.
3
  • In a large frying pan, heat a drizzle of olive oil over high heat.
  • Cook pork mince, sweetcorn and onion, breaking up with a spoon, until just browned, 3-4 minutes.
  • Reduce heat to medium, then stir in sweet chilli sauce, oyster sauce and the water (for the sauce) and simmer, until bubbling and slightly reduced, 1-2 minutes. Season with pepper.
4
  • Meanwhile, add green beans and a splash of water to a microwave-safe bowl, then cover with a damp paper towel.
  • Microwave green beans on high until just tender, 2-4 minutes.
  • Drain green beans. Then return to the bowl and season to taste. Cover to keep warm.
5
  • To the pan with rice, stir in the vinegar, sugar, mayonnaise, mixed sesame seeds and the salt, until coated.
  • Lay a piece of cling wrap on a clean surface and place a heaped spoonful of rice mixture in the centre.
  • Gather the cling wrap up around the rice and twist tightly at the top to create balls (3-4 per person).
6
  • Divide lettuce cups, carrot and green beans between plates. Fill lettuce cups with confetti pork.
  • Serve with sesame rice balls. Enjoy!
