Cooking Steps

Cook the rice

• Drain sweetcorn. 
• In a medium saucepan, heat the butter with a 
dash of olive oil over medium heat.
• Cook corn until fragrant, 1-2 minutes. Add 
basmati rice, the water and a generous pinch of 
salt, stir, then bring to the boil.
• Reduce heat to low and cover with a lid.
• Cook for 10 minutes, then remove from heat 
and keep covered until rice is tender and water is 
absorbed, 10 minutes. 
TIP: The rice will finish cooking in its own steam so 
don't peek!

Prep the veggies

• Meanwhile, thinly slice tomato into wedges. 
Chop broccoli (including stalk!) into small 
florets. 

Prep the meatballs

• In a medium bowl, combine beef mince, fine 
breadcrumbs, the egg, Tex-Mex spice blend 
and a pinch of salt.
• Using damp hands, roll heaped spoonfuls 
of beef mixture into small meatballs
(4-5 per person). Transfer to a plate. 

Cook the meatballs

• In a large frying pan, heat a drizzle of olive oil
over medium-high heat.
• Cook meatballs, turning, until browned and 
cooked through, 8-10 minutes (cook in batches 
if your pan is getting crowded).

Steam the broccoli

• While the meatballs are cooking, add broccoli
and a splash of water to a microwave-safe bowl, 
then cover with a damp paper towel.
• Microwave broccoli on high until just tender, 
2-4 minutes.
• Drain broccoli, then return to the bowl and cover 
to keep warm. 

Finish & serve

• Divide speckled rice, Mexican beef meatballs and 
vibrant veggies between plates.
• Serve with shredded Cheddar cheese and 
BBQ sauce. Enjoy!
