2 clove
garlic
1
cucumber
1 tin
sweetcorn
1 packet
pork mince
1 packet
fine breadcrumbs
1 bag
slaw mix
½ packet
burger sauce
1 sachet
All-American Spice Blend
1 packet
Shredded Cheddar Cheese
olive oil
¼ tsp
salt
1
egg
1 drizzle
white wine vinegar
• Finely chop garlic. Roughly chop cucumber. Drain sweetcorn (see ingredients). • Heat a large frying pan over high heat. Cook sweetcorn until lightly browned, 4-5 minutes. Transfer to a large bowl.
TIP: Cover the pan with a lid if the corn kernels are "popping" out.
• In a medium bowl, combine pork mince, All-American spice blend, fine breadcrumbs, garlic, the salt and egg. • Shape pork mixture into 2cm-thick patties (2 per person).
• Return frying pan to medium-high heat with a drizzle of olive oil. • Cook pork patties until just cooked through, 4-5 minutes each side. • In the last 1-2 minutes of cook time, sprinkle shredded Cheddar cheese over patties and cover with a lid (or foil) so the cheese melts.
• Add slaw mix, cucumber and a drizzle of white wine vinegar and olive oil to the charred corn. Toss to combine. Season to taste. • Divide cucumber slaw between bowls. Top with cheesy pork patties. • Dollop over burger sauce (see ingredients) to serve. Enjoy!
