Get prepped

  • Preheat the oven to 240°C/220°C fan-forced.
  • Place prepped veggies and peeled & diced pumpkin on a lined oven tray.
Start the traybake

  • Drizzle veggies with olive oil, sprinkle with mixed sesame seeds, season with salt and toss to coat.
  • Roast until tender, 25-30 minutes.

TIP: If your oven tray is crowded, divide between two trays.

Bring it all together

  • When veggies have 10 minutes remaining, season chicken on both sides with salt and pepper.
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat.
  • Cook chicken thigh, turning occasionally, until browned and cooked through, 12-14 minutes. Spoon teriyaki sauce over chicken and cook until just cooked through, 1-2 minutes.. TIP: Chicken is cooked through when it's no longer pink inside.
Finish & serve

  • Divide teriyaki chicken and pumpkin traybake between plates.
  • Spoon over any remaining sauce from the tray. Enjoy!
