Cooking Steps

Trim the ends of the broccolini. Finely chop the garlic (or use a garlic press). Heat a medium frying pan over a medium-high heat with a drizzle of olive oil. Add the broccolini with a dash of water and cook, tossing regularly, until just tender, 4-5 minutes. Add the garlic and cook until fragrant, 1-2 minutes.

While the broccolini is cooking, zest the lemon (see ingredients list) to get a pinch and slice into wedges. Pick and finely chop the mint.

In a medium bowl, combine the lemon zest, a squeeze of lemon juice and a pinch of salt and pepper. Add the broccolini and toss to coat.

Divide the broccolini between plates. Crumble over the feta and sprinkle over the mint and chilli flakes (if using). Serve with the remaining lemon wedges. Enjoy!
