Cooking Steps

Bake the fries
1

• Preheat oven to 240°C/220°C fan-forced. Cut potato into fries. • Place fries on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. • Spread out evenly, then bake until just tender, 20-25 minutes.

Get prepped
2

• Meanwhile, slice cucumber into sticks. Thinly slice radish and spring onion. • Finely chop garlic. • In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook spring onion and garlic until fragrant, 1 minute. Transfer to a bowl. • See 'Top Steak Tips!' (below). Place beef rump between two sheets of baking paper. Pound beef with a meat mallet or rolling pin until slightly flattened. Season generously with salt and pepper.

TIP: Pounding the beef ensures that it's extra tender once cooked.

Cook the beef
3

• Return frying pan to high heat with a drizzle of olive oil. When oil is hot, cook beef, turning, for 5-6 minutes (depending on thickness), or until cooked to your liking. Transfer to a plate to rest. • Remove pan from heat, add Sichuan garlic paste and the water, and stir to combine. • Once the beef has finished resting, thinly slice beef and return to pan. Toss to coat.

Make the salad
4

• Meanwhile, combine mixed salad leaves, radish, cucumber and a drizzle of vinegar and olive oil in a medium bowl. Season to taste. • When the fries are done, add spring onion oil to the tray and toss to coat.

Warm the bao buns
5

• Place bao buns on a microwave-safe plate and cover with a damp paper towel. • Microwave on high for 1 minute. Set aside to rest, 1 minute.

Serve up
6

• Gently halve bao buns and spread with mayonnaise. • Fill with Sichuan garlic beef and radish salad. Spoon over any remaining sauce. • Serve with spring onion fries and remaining salad. Enjoy!
