Cooking Steps

1
  • Roughly chop cos lettuce (see ingredients).
  • Slice tomato and lemon into wedges.
  • Slice avocado in half, scoop out flesh and roughly chop.
  • Finely chop garlic.
  • Drain and rinse cannelini beans.
  • Place your hand flat on top of chicken breast and slice through horizontally to make two thin steaks.
2
  • In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook chicken steaks and kiwi spice blend until cooked through, 3-5 minutes each side (cook in batches if your pan is getting crowded). Transfer to a plate and cover to keep warm.

TIP: The chicken is cooked when it is no longer pink inside.

3
  • When the chicken is cooked, wipe out frying pan and return to high heat with a good drizzle of olive oil, cook cannellini beans until golden and warmed through, 3-4 minutes. Add garlic and cook until fragrant, 1 minute. Remove pan from heat and add a good squeeze of lemon juice.
4
  • In a large bowl, combine cos lettuce, tomato, avocado, cooked cannelini beans and caesar dressing. Season to taste.
  • Slice chicken.
  • Divide garlicky white bean salad between bowls. Top with smokey chicken. Serve with any remaining lemon wedges. Enjoy!
