• Preheat oven to 240°C/220°C fan-forced. • Peel and cut kohlrabi into small chunks. Cut carrot into bite-sized chunks. • Place veggies on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. Roast until tender, 20-25 minutes.

• Meanwhile, thinly slice apple. Finely chop garlic. • Place your hand flat on top of each chicken breast and slice through horizontally to make two thin steaks. • In a medium bowl, combine Aussie spice blend, a drizzle of olive oil and a pinch of pepper. Add chicken and turn to coat.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook garlic until fragrant, 1 minute. • Transfer garlic oil to a small bowl, then add Hollandaise and stir to combine. Season to taste and set aside.

• When the veggies have 10 minutes remaining, return frying pan to medium-high heat with a drizzle of olive oil. • When oil is hot, cook chicken until cooked through, 3-5 minutes each side. • Remove pan from heat, then add the honey and gently turn chicken to coat.

TIP: The chicken is cooked through when it's no longer pink inside.

• While the chicken is cooking, combine mixed salad leaves, apple and a drizzle of vinegar and olive oil in a large bowl. Season to taste.

• Slice spiced chicken. • Divide chicken and honey glaze, roasted veggies and apple salad between plates. • Serve with garlic Hollandaise. Enjoy!
