Cooking Steps

• Heat olive oil in a frying pan over medium-high heat • Cook pork and seasoning, until cooked through, 3-4 mins each side • Transfer to plate, cover and rest for 5 mins • Finely chop herbs, tomato and cucumber

• Prick a few holes in potato packet. Microwave until soft and steaming, 4-5 mins • Return pan to low-medium heat with a drizzle of oil. Add cream (1/2 bottle for 2P / 1 bottle for 4P) and herbs and cook until slightly reduced, 1-2 mins • Remove pan from heat, then stir through cheese

• In a bowl, combine tomato, cucumber, mixed leaves and dressing. Season • Plate up potato, pork and salad • Spoon sauce over pork to serve
