Cooking Steps

Start the chicken bake

• Preheat oven to 240°C/220°C fan-forced. Boil the kettle.
• Finely chop garlic. Slice lemon into wedges.
• In a large baking dish, combine sliced leek, basmati rice, chicken-style 
stock powder, half the garlic and a generous squeeze of lemon juice.
• Place chicken drumsticks on top and sprinkle with Mediterranean 
seasoning and a drizzle of olive oil. Season with salt.
• Pour the boiling water (2 cups for 2 people / 4 cups for 4 people) over rice, 
cover tightly with foil and bake for 20 minutes.

• Remove dish from oven, discard foil and bake, uncovered, until chicken is 
golden brown and cooked through, a further 20-25 minutes.

TIP: Chicken is cooked through when it’s no longer pink inside.
TIP: Add a little extra water if the liquid is absorbed before the rice is done.
TIP: The rice will be slightly crunchy on top, this adds to the texture!

Make the tzatziki

• Meanwhile, finely chop cucumber.
• Pick mint leaves and thinly slice.
• In a small microwave-safe bowl, add remaining garlic and a drizzle of olive 
oil. Microwave in 10 second bursts until fragrant. Add Greek-style yoghurt, 
cucumber, mint and a good squeeze of lemon juice to the garlic-oil 
mixture. Stir to combine and season to taste with salt and pepper. 

Finish & serve

• Divide Mediterranean chicken and leek rice bake between plates. Dollop 
over tzatziki.
• Serve with rocket leaves and any remaining lemon wedges. Enjoy!
