Cooking Steps

Cook the beef

• Heat a large frying pan over medium-high heat. • Cook beef mince (no need for oil!), breaking up with a spoon, until just browned, 4-5 minutes. • SPICY! This is a mild spice blend, but use less if you're sensitive to heat! Add Tex-Mex spice blend, and cook until fragrant, 1 minute. • Remove from heat, add a splash of water and mix to combine.

Toss the slaw

• Meanwhile, roughly shred cos lettuce. In a large bowl, combine lettuce, a drizzle of white wine vinegar and olive oil. Season with salt and pepper.

Heat the tortillas

• Microwave mini flour tortillas on a microwave-safe plate in 10 second bursts until warmed through. Little cooks: Help warm the tortillas with oven gloves and under adult supervision. Be careful, the plate can get hot!

Serve up

• Build tacos by spreading tortillas with smokey aioli, then top with lettuce, Texan beef and shredded Cheddar cheese to serve. Enjoy!
