• Heat olive oil in frying pan over high heat. Season beef. • Cook beef, turning regularly, for 2-3 mins on each side or until cooked to your liking. • In the last min of cooking, stir through red wine jus until heated through. Transfer to a shallow bowl to rest.
• Meanwhile, transfer mashed potato to a bowl • Microwave until hot and steaming, 3 minutes • Stir through cheese and season to taste
• Trim baby broccoli and roughly chop almonds • Return pan to medium-high heat with a drizzle of oil • Cook baby broccoli until tender, 4-5 mins. Stir through spinach until wilted, 1 min • Serve steak with mash, greens, red wine jus and top with almonds. Enjoy!
