Our twist on the national dish of the Philippines takes succulent diced chicken simmered in a tangy kecap manis and sweet soy glaze. Served over jasmine rice with Asian chilli-dressed greens and broccoli, finish with a sprinkle of spring onion for a truly delightful dinner!

- Add the water (for the rice) to a medium saucepan and bring to the boil.
- Add jasmine rice, stir, cover with a lid and reduce heat to low.
- Cook for 12 minutes, then remove pan from heat and keep covered until rice is tender and all the water is absorbed, 10-15 minutes.
TIP: The rice will finish cooking in its own steam so don't peek!
- Meanwhile, finely chop garlic. Cut onion into thin wedges.
- Thinly slice spring onion.
- Chop broccoli (including stalk!) into small florets.
- Roughly chop Asian greens.
- In a small bowl, combine kecap manis, the soy sauce, water (for the sauce), vinegar, brown sugar and garlic.
- In a large frying pan, heat a drizzle of olive oil over medium-high heat.
- Cook diced chicken and sweet soy seasoning, until browned and fragrant, 2 minutes.
- Reduce heat to medium-low, add onion and the kecap manis mixture and cook, turning occasionally, until chicken is cooked and sauce is slightly thickened, 4-6 minutes.
- Season generously with pepper.
TIP: Chicken is cooked through when it's no longer pink inside.
- While chicken is cooking, add broccoli, Asian greens and a splash of water to a microwave-safe bowl, then cover with a damp paper towel.
- Microwave on high until just tender, 2-4 minutes.
- Drain any excess liquid, pour over Asian chilli dressing and toss to combine. Season.
- Slice chicken (if preferred).
- Divide rice and chili-dressed Asian greens between bowls.
- Top with chicken and spoon over adobo sauce. Garnish with spring onion. Enjoy!
