Ginger & Hoisin-Glazed Chicken

with Pear Slaw & Sesame Fries

Sweet and salty hoisin sauce to drizzle over golden chicken is a great combination. Try serving with sesame fries and you’ve got another match. Putting sweet pear in a creamy slaw and adding it to the ensemble is yet one more amazing flavour combo. Altogether that's one stellar dish that everyone is going to be raving about.

Cooking Steps

1

• Preheat oven to 240°C/220°C fan-forced.
• Cut potato into fries.
• Place the fries and sesame seeds onto a lined oven tray. Season with salt and pepper and drizzle with olive oil. Toss to coat, then bake until tender, 20-25 minutes.

Little cooks: Kids can help toss the fries.

2

• Finely chop garlic. Thinly slice pear into sticks.

3

• In a small bowl, combine hoisin sauce (see ingredient list), the honey, water and the soy sauce. Set aside.

4

• Place your hand flat on top of chicken and slice through horizontally to make two thin steaks.
• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook chicken until cooked through, 3-5 minutes each side. Transfer to a plate.

5

• Return the pan to medium heat with a drizzle of olive oil. Cook garlic and ginger paste until fragrant, 1 minute.
• Add the hoisin mixture and simmer until slightly reduced, 1-2 minutes. Remove from heat, then stir through any chicken resting juices.
• In a medium bowl, combine slaw mix, pear, Asian chilli dressing, a drizzle of olive oil and a pinch of salt and pepper. Toss to combine.

6

• Divide slaw, sesame fries and chicken between plates.
• Spoon ginger and hoisin sauce over chicken.
• Sprinkle over crispy shallots to serve.

Little cooks: Add the finishing touch by sprinkling over the crispy shallots!
