  • Preheat oven to 240°C/220°C fan-forced. Boil the kettle.
  • Finely chop garlic. Slice lemon into wedges.
  • In a large baking dish, combine leek, basmati rice, chicken-style stock powder, half the garlic and a generous squeeze of lemon juice.
  • Place chicken drumsticks on top and sprinkle with Mediterranean spice blend and a drizzle of olive oil. Season with salt.
  • Pour the boiling water over rice, cover tightly with foil and bake for 20 minutes.

  • Remove from oven, remove foil and bake, uncovered, until chicken is golden brown and cooked through, a further 20-25 minutes.

TIP: Chicken is cooked through when it is no longer pink inside.

TIP: Add a little extra water if the liquid is absorbed before the rice is done.

TIP: The rice will be slightly crunchy on top, this adds to the texture!

  • Meanwhile, finely chop cucumber.
  • Pick mint leaves and thinly slice.
  • In a small heat-proof bowl, add remaining garlic and a drizzle of olive oil. Microwave in 10 second bursts, until fragrant. Add Greek-style yoghurt, cucumber, mint and a good squeeze of lemon juice to garlic oil mixture. Stir to combine and season to taste.

  • Divide Greek lemon chicken rice bake between plates. Dollop over tztatziki.
  • Serve with rocket and any remaining lemon wedges. Enjoy!
