Make the mash

• Boil the kettle. Half-fill a medium saucepan with boiling water. • Peel potato and parsnip, then cut both into large chunks. • Cook potato and parsnip in the boiling water, over high heat, until easily pierced with a fork, 10-15 minutes. • Drain and return to saucepan. • Add the milk, butter and the salt to the veggies. Mash until smooth and cover to keep warm.

Cook seasoning blend (see ingredients) and remaining garlic until fragrant, 1 minute. • Reduce the heat to low, then add a dash of water and scrape up any bits stuck to the bottom of the pan. • Add cream (see ingredients) and cook, stirring, until slightly thickened, 1-2 minutes. • Return beef and any resting juices to the pan, then stir to combine.
