• Preheat oven to 220°C/200°C fan-forced. • Slice mini baguettes on an angle into 1cm-thick slices. In a large bowl, combine garlic & herb seasoning and a 1/4 cup of olive oil. Add baguette slices and toss until well coated. • Divide baguette slices between two lined oven trays and spread out evenly. Bake until golden and crisp, 5-6 minutes. • Meanwhile, thinly slice tomato. Crumble cheese (see ingredients). Finely chop herbs.
• Sprinkle 1/2 the crumbled cheese over 1/2 the crostini. Tear or slice Akaroa smoked salmon into small pieces and lay over cheese-topped crostinis. • Zest lemon and cut in half. Sprinkle lemon zest over salmon-topped crostinis. Season with black pepper and squeeze over some lemon juice.
TIP: Roll or fold the salmon pieces to give some height!
• Spread creamy pesto dressing over remaining crostinis. Top with sliced tomato and sprinkle with remaining crumbled cheese. Drizzle with balsamic glaze.
• Arrange crostini on a serving platter and garnish with herbs to serve. Enjoy!
