• Preheat oven to 240°C/220°C fan-forced. • Finely chop garlic and onion (see ingredients). Slice tomato into rounds. Slice cucumber(see ingredients) into half-moons. Thinly slice mint. • In a small bowl, combine Greek-style yoghurt and mint. Season to taste and set aside.

• Heat a large frying pan over high heat. • Cook beef mince (no need for oil!), onion and currants, breaking up with a spoon, until just browned, 3-4 minutes. • Add garlic, tomato paste and Middle Eastern seasoning and cook, until fragrant, 1 minute. • Add the water and butter (for the filling) and simmer, until slightly reduced, 2-3 minutes. Season to taste.

• In a small microwave-safe bowl, add the butter (for the pastry). Microwave in 10 second bursts, until melted. Lay filo pastry sheets on a dry surface and fold in half. • Spoon beef mixture in the center of filo sheet. Fold sides over and roll into a cigar. • Place beef cigars on a lined oven tray. Repeat with remaining filo sheets and beef mixture.

• Brush cigars with the melted butter. • Bake until golden, 15-20 minutes.

• Meanwhile, in a large bowl, combine tomato, cucumber, mixed salad leaves and a drizzle of white wine vinegar and olive oil. Season to taste.
