OK, we may be getting a little cheeky with this one, but we know Nonna is all about wonderful Italian flavours and bringing people around the table to enjoy a meal. When tender herby beef strips, creamy pesto and caramelised onions come together in DIY tacos, we think Nonna would approve.

1 tub
pesto dressing supreme
(Contains: Eggs, Milk, Tree Nuts; )
olive oil
2 tbs
balsamic vinegar
1 tbs
warm water
1.5 tbs
brown sugar
½ tsp
salt
Thinly slice the red onion. Finely chop the garlic (or use a garlic press). Shred the cos lettuce. Finely chop the tomato.
In a medium frying pan, heat a good drizzle of olive oil over a medium-high heat. Add the red onion and cook, stirring, for 5-6 minutes, or until softened. Add the balsamic vinegar, warm water and brown sugar, and simmer for 3-5 minutes or until the liquid is nearly evaporated and the mixture is slightly sticky. Season with salt and pepper and remove from the heat.
While the onions are caramelising, combine the garlic, beef strips and Italian herbs in a large bowl. Drizzle with olive oil and season with the salt and a pinch of pepper. Mix well.
In a second medium frying pan, heat a drizzle of olive oil over a high heat. When the oil is hot, add 1/3 of the beef strips and cook for 1-2 minutes, or until browned and cooked through. Transfer to a medium bowl and repeat with remaining beef. TIP: Cooking the meat in batches over a high heat allows it to brown and develop flavour, making it more tender.
Heat the mini flour tortillas in a sandwich press or on a plate in the microwave for 10 second bursts, or until warmed through.
Take everything to the table. Build your tacos by spreading a layer of the pesto dressing supreme over a tortilla. Top with the cos lettuce, tomato and Italian beef. Finish with the caramelised onions.
