• Boil the kettle. • Thinly slice carrot into half-moons. Trim green beans and cut into thirds. Roughly chop Asian greens. Finely chop garlic. • In a large frying pan, heat a drizzle of olive oil over medium-high heat. • Cook carrot and green beans until tender, 4-6 minutes. • Add Asian greens and garlic and cook until fragrant, 1 minute. Season and transfer to a bowl.
• While veggies are cooking, half-fill a medium saucepan with boiling water. • Cook egg noodles over a medium-high heat, stirring occasionally with a fork to separate, until tender, 4-5 minutes. • Drain, rinse with warm water, then return noodles to the saucepan. • Add sesame dressing and the soy sauce. Toss to combine. Cover to keep warm.
• Return the frying pan to medium-high heat with a drizzle of olive oil. When oil is hot, crack the eggs into the pan. Cook until egg whites are firm and yolks are cooked to your liking, 4-5 minutes. Transfer to a plate. • Return the frying pan to high heat with a drizzle of olive oil. Cook pork mince, breaking up with a spoon, until just browned, 3-4 minutes. • Add ginger paste and hoisin sauce and cook until fragrant, 1 minute. • Remove from heat. Add veggies and noodles. Toss to combine.
TIP: Add a splash of water if the noodles look dry!
• Divide sesame-hoisin pork noodles between bowls. • Top with a fried egg and sprinkle over crispy shallots. Enjoy!
