Cooking Steps

Bake the wedges

• Preheat oven to 240°C/220°C fan forced.
• Cut potato into wedges.
• Place potato on a lined oven tray. Drizzle with olive oil, sprinkle with a pinch of salt and pepper. Toss to coat, spread out evenly, then bake until tender, 25-30 minutes. 

Little cooks: Kids can help toss the wedges.

• Meanwhile, slice avocado in half, scoop out flesh and thinly slice. 
• Thinly slice celery
• In a small bowl, combine the mayonnaise, sesame oil and soy sauce. Set aside. 

Crumb the prawns

• Set your air fryer to 200°C. Pat peeled prawns dry with paper towel.
• In a shallow bowl, combine the plain flour and a generous pinch of salt. In a second shallow bowl, whisk the egg.
• In a third shallow bowl, place panko breadcrumbs.
• Dip prawns into flour mixture, followed by egg, and finally in breadcrumbs. Set aside on a plate.

Cook the prawns

• When the wedges have 10 minutes remaining, place crumbed prawns into air fryer basket and cook, until golden and tender, 3-4 minutes. Cook in batches if needed.
Mix oil quantity with panko breadcrumbs when crumbing (1 tbs per person).

Make the slaw

• Meanwhile, in a medium bowl, combine avocado, celery and slaw mix.
• Add Asian chilli dressing and toss to coat.

Finish & serve

• Divide Asian slaw, wedges and sweet-soy crumbed prawns between plates.
• Serve with sesame mayo. Enjoy!
