The rice will be cooked and on the plate in minutes and the tender chicken coated in a mouth-watering teriyaki sauce cooked, flavoured and served on top. Add a mayo-pear salad to bring an element of freshness to the meal and you’re ready to dig in.

• Boil the kettle. Half-fill a medium saucepan with boiling water. • Add basmati rice and a pinch of salt and cook, uncovered, over high heat until tender, 12 minutes. Drain and return to saucepan. • While the rice is cooking, slice pear and celery.
• Place your hand flat on top of chicken breast and slice through horizontally to make two thin steaks. • In a large frying pan, heat a drizzle of olive oil over medium-high heat. When oil is hot, cook chicken until cooked through, 3-5 minutes each side (cook in batches if your pan is getting crowded). • Remove from heat, then add teriyaki sauce, soy sauce and the brown sugar. Turn to coat.
• While the pork is cooking, combine slaw mix, mayonnaise, pear and celery in a large bowl. Season to taste.
• Slice the pork. • Divide rice and celery-pear slaw between plates. Top with pork and teriyaki sauce. • Sprinkle over crushed peanuts to serve. Enjoy!
