Large Frying Pan

Cooking Steps

Cook the beef
1

• In a large bowl, combine Tex-Mex spice blend and a drizzle of olive oil.
• Add beef strips and turn to coat.

Cook the beef
2

• In a large frying pan, heat a drizzle of olive oil over high heat.
• When oil is hot, cook beef strips, tossing, in batches until browned and cooked through, 1-2 minutes.
• Remove pan from heat, then add enchilada sauce (see ingredients) and the butter. Stir to combine, then toss beef to coat.

TIP: Cooking the meat in batches over a high heat helps it stay tender.

Heat the rice & toss the salad
3

• Meanwhile, microwave basmati rice until steaming, 2-3 minutes.
• Roughly chop tomato and baby spinach leaves.
• In a small bowl, combine tomato, baby spinach, a pinch of salt and a drizzle of white wine vinegar and olive oil.

Finish & serve
4

• Divide rice between bowls. Top with saucy spiced beef, spooning over any remaining pan sauce and tomato salsa.
• Tear over coriander and dollop over sour cream to serve. Enjoy!
