
Satisfy your Thai takeaway cravings with this larb-inspired recipe that's both easy and delicious. Sweet chilli sauce, ginger, soy sauce and lemon come together to pack your lamb full of mouthwatering flavour. Served on a bed of fluffy rice with a side of apple and radish slaw for good measure, this is sure to become a household favourite.

vinegar (white wine or rice wine)

• Add the water to a medium saucepan and bring to the boil.
• Add jasmine rice, stir, cover with a lid and reduce heat to low.
• Cook for 12 minutes, then remove the pan from heat and keep covered until rice is tender and all the water is absorbed, 12 minutes.
TIP: The rice will finish cooking in its own steam so don't peek!

• Meanwhile, thinly slice radish and apple.
• Cut lemon into wedges.

• When rice has 5 minutes remaining, heat a large frying pan over high heat.
• Cook lamb mince (no need for oil!), breaking up with a spoon, until just browned, 3-4 minutes. • Add sweet soy seasoning and ginger paste and cook, until fragrant, 1 minute.
• Remove from heat and stir in sweet chilli sauce, fish sauce & rice vinegar mix and a squeeze of lemon juice, until lamb is coated.

• In a medium bowl, combine apple, radish, slaw mix, the sesame oil and a drizzle of vinegar. Season with salt and pepper to taste.
• Divide rice and sesame slaw between bowls. Top with Thai chilli and ginger beef larb.
• Tear over mint and serve with remaining lemon wedges. Enjoy!
