Cherry Tomatoes
Halve cherry tomatoes. Thinly slice cucumber into rounds. Slice lemon into wedges.
Heat a large frying pan over medium-high heat. Toast slivered almonds, tossing, until toasted, 3-4 minutes.
In a large serving bowl, combine cucumber, tomato, salad leaves, a squeeze of lemon juice, balsamic and olive oil dressing and a pinch of salt and pepper.
Crumble over cow's milk feta (see ingredients). Drizzle with balsamic glaze. Sprinkle over almonds. Enjoy!
