•Large Non-Stick Pan
•Baking Paper
- Preheat oven to 220°C/200°C fan-forced. Peel kumara and cut into wedges.
- Place kumara on an oven tray lined with baking paper. Drizzle with olive oil, sprinkle with crispy chip seasoning and toss to coat.
- Spread out evenly, then bake until tender, 20-25 minutes.
- Meanwhile, slice tomato into thin wedges.
- Slice avocado in half, scoop out flesh and thinly slice.
- Cut halloumi into 1cm-thick slices.
- In a shallow bowl, combine the plain flour and all-American seasoning.
- In a second shallow bowl, whisk the egg.
- In a third shallow bowl, place panko breadcrumbs. Dip halloumi slices into flour mixture to coat, then into egg, and finally in breadcrumbs. Set aside on a plate
- When the wedges have 10 minute remaining, heat a large frying pan over medium-high heat with enough olive oil to coat the base.
- Cook halloumi until golden brown, 2-4 minutes each side. Set aside on a paper towel-lined plate.
- In a medium bowl, combine slaw mix, garlic aioli and a drizzle of white wine vinegar. Season to taste.
- Divide crispy kumara wedges, crumb-a-licious halloumi, tomato wedges, rainbow slaw and avocado slices between plates. Enjoy!
