Honey-Soy Sauce

Fresh Chilli

vinegar (rice wine or white wine)
1 drizzle
olive oil
• See ‘Top Steak Tips!’ (below left).
• Chop broccoli (including stalk!) into small florets.
• Slice courgette into half-moons.
• Finely chop garlic.
• Thinly slice fresh chilli (if using).
• Season beefrump with salt and pepper.
• In a large frying pan, heat a drizzle of olive oil over high heat. When oil is hot, cook beef, for 4-5 minutes each side for medium-rare, or until cooked to your liking.
• Transfer to a plate to rest.
• Wipe out the frying pan, then return to medium-high heat with a drizzle of olive oil.
• Cook broccoli and courgette, tossing, until tender, 5-6 minutes.
• Add garlic and cook until slightly wilted and fragrant, 1-2 minutes. Season to taste.
• In a small microwave-safe bowl, microwave honey-soy sauce and the
vinegar in 30 second bursts, until warmed through. Stir through any steak resting juices.
• Slice steak. Divide steak and green veggies between plates.
• Spoon honey-soy sauce over beef and tear over coriander.
• Garnish with chilli to serve. Enjoy!
