
These flavourful prawns are popping with a garlic and soy glaze and sit atop a bead of crunchy apple and celery sesame slaw. To make dinner really standout, sprinkle over crispy shallots for a tasty crunch.

• Thinly slice celery.
• Thinly slice apple into sticks.
• In a small bowl, combine garlic paste, the soy sauce, brown sugar, a splash
of water and half the vinegar.

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. Cook
peeled prawns, tossing, until pink and starting to curl up, 3-4 minutes.
• Add soy-garlic mixture and cook until fragrant, 1 minute.

• Meanwhile, in a large bowl, combine shredded cabbage mix, baby spinach
leaves, julienned carrot, apple, celery, the mayonnaise, sesame oil and
remaining vinegar. Season to taste with salt and pepper.

• Divide apple slaw between bowls.
• Top with soy-garlic prawns and drizzle over sesame dressing.
• Sprinkle with crispy shallots to serve. Enjoy!
