Cooking Steps

Bake the bacon potatoes

• Preheat the oven to 240°C/220°C fan-forced.
• Cut potato into bite-sized chunks. 
• Cut streaky bacon into 1cm pieces.
• Place potato on a lined oven tray. Drizzle with olive oil, season with salt and toss to coat. 
• Spread out evenly, then roast until tender, 15 minutes.
• Remove tray from the oven, then add bacon to the potato. Roast until golden, 10-12 minutes. 

Prep the veggies

• Meanwhile, slice cucumber (see ingredients) into sticks. Thinly slice radish.
• Slice lemon into wedges. 

Prep the chicken

• Cut chicken breast into 2cm chunks.
• In a medium bowl, combine chicken, sweet soy seasoning and a drizzle of olive oil. 

Cook the chicken

• In a large frying pan, heat a drizzle of olive oil over medium-high heat. When oil is hot, cook chicken, turning occasionally, until browned and cooked through, 5-6 minutes. Transfer to a plate. 

TIP: Chicken is cooked through when it’s no longer pink inside. 

Make the salad

• Meanwhile, in a large bowl, combine mixed salad leaves, radish, cucumber, the sesame oil and a generous squeeze of lemon juice. Season to taste with salt and pepper.
• Place bao buns on a microwave-safe plate and cover with a damp paper towel. 
• Microwave on high for 1 minute. Set aside to rest for 1 minute. 

Finish & serve

• Gently halve bao buns and evenly spread with some lime & chilli mayo. 
• Fill bao buns with sweet-soy chicken and some cucumber salad. Tear over coriander.
• Serve with bacon potatoes and any remaining cucumber salad and mayo. Enjoy!
