Cooking Steps

• Bring a large saucepan of salted water to the boil. Cook orecchiette in boiling water until 'al dente', 8 minutes. • Drain, reserving some pasta water (1/4 cup for 2 people / 1/2 cup for 4 people), then return orecchiette to the saucepan. • Meanwhile, thinly slice leek. Finely chop tomato and mild chorizo.

• Meanwhile, cut chicken breast into 2cm chunks. • Heat a large frying pan over medium-high heat with a drizzle of olive oil. Cook chicken, tossing occasionally, until browned and cooked through, 5-6 minutes. Transfer to a plate. • Return pan to medium-high heat with a drizzle of olive oil. Cook mild chorizo, tossing, until golden, 4-5 minutes. • Transfer chorizo to a plate, leaving any residual oil in the pan.

• Return frying pan to medium-high heat. Cook leek and tomato, until tender, 4-5 minutes. • Add garlic & herb seasoning and cook until fragrant, 1-2 minutes. • Return chorizo and chicken to the pan, then add cream (see ingredients), crushed & sieved tomatoes (see ingredients), cooked orecchiette and reserved pasta water. • Cook, stirring, until slightly thickened, 2 minutes. Season to taste.

• Divide creamy chicken, tomato and chorizo orecchiette between bowls. • Sprinkle over grated Parmesan cheese. Tear over parsley to serve. Enjoy!
