Cooking Steps

Get prepped

• Boil the kettle.
• Finely chop tomato. 
• Grate carrot. 
• Zest lemon and slice into wedges.
• Cut chicken thigh into 2cm chunks.

Little cooks: Under adult supervision, older kids can help grate the zest. 

Cook the risoni

• Half-fill a medium saucepan with boiling water and add a generous pinch of salt. Cook risoni over high heat until ‘al dente’, 7-8 minutes. 
• Reserve some pasta water (see ingredients). Drain risoni, then return to the saucepan. 

TIP: ‘Al dente’ pasta is cooked through but still slightly firm in the centre. 

Cook the chicken & the veggies

• Meanwhile, in a large frying pan, heat a drizzle of olive oil over high heat. When oil is hot, cook chicken, carrot and sliced leek tossing, until browned and cooked through, 5-6 minutes. Add tomato and cook, until softened, 2-3 minutes.
• Add garlic & herb seasoning, tomato paste and the butter and cook until fragrant, 1-2 minutes.
• Remove pan from heat, then add risoni, reserved pasta water, lemon zest and a generous squeeze of lemon juice. Stir to combine. Season to taste.

TIP: Chicken is cooked through when it's no longer pink inside.

Finish & serve

• Divide crispy chicken and hidden veggie risoni between bowls.
• Top with plant-based basil pesto. 
• Sprinkle over grated Parmesan cheese. 
• Serve with any remaining lemon wedges. Enjoy!
