Cooking Steps

Get prepped

  • Preheat oven to 240°C/220°C fan-forced.
  • Cut pumpkin, brown onion and apple into 1 cm-thick wedges.
  • Cut potato into large chunks.

TIP: Peel the pumpkin if you prefer and scrape out the seeds, if necessary!

Start the traybake

  • Place veggies on a lined oven tray. Season with salt and drizzle with olive oil and toss to coat.
  • Roast until just tender, 15 minutes.
Finish the traybake

  • Remove tray from oven and add lemon & herb chicken sausages on top of the veggies (use two oven trays if your tray is getting crowded). Drizzle with olive oil and turn to coat.
  • Bake until cooked through, 10-14 minutes.
  • Once the traybake is done, add baby spinach & rocket mix and a drizzle of balsamic vinegar, tossing to combine. TIP: Use two oven trays if necessary.
Finish & serve

  • Divide chicken sausage and apple traybake between plates.
  • Drizzle over honey mustard sauce to serve. Enjoy!
