Preheat the oven to 220°C/200°C fan-forced. Bring a medium saucepan of salted water to the boil. Peel the potato and cut into 2cm chunks. Trim the baby broccoli and halve lengthways. Add the potato to the boiling water and cook for 8 minutes. Place a colander or steamer basket on top of the saucepan, add the baby broccoli and cook until tender and the potato can be easily pierced with a knife, 4 minutes. Transfer the broccoli to a bowl and cover to keep warm.
Drain the potatoes and add the milk, salt and 1/2 the butter. Mash with a potato masher or fork until smooth. Stir through the grated Parmesan cheese. Cover to keep warm.
While the potatoes are cooking, place the sausages onto an oven tray lined with baking paper and bake until cooked through, 20 minutes. TIP: Turn the sausages halfway through cooking to get an even colour on both sides.
While the sausages are in the oven, finely chop the brown onion and garlic. Roughly chop the tomato. Drain the cannellini beans (see ingredients).
Return the frying pan to a medium-high heat with a drizzle of olive oil. Add the onion and cook until softened, 2-3 minutes. Add the garlic and tomato paste and cook, until fragrant, 1 minute. Add the tomato, cannellini beans, chicken style stock powder and water. Bring to the boil, then reduce to simmer, until slightly thickened, 5-7 minutes. Remove from the heat and add the remaining butter, baby spinach leaves and and stir to combine.
Divide the parmesan mash between plates and top with the pork sausage and tomato bean casserole. Serve with the baby broccoli.
